Going to a 4th of July cookout at my aunt's house

Saturday
I don't get home from work until 7 pm so my husband is on dinner duty- usually he makes something easy from the pantry or freezer.

Saturday
Husband's on dinner duty because I don't get home from work until 7 pm- he usually makes an organic frozen pizza, pasta, scramble eggs, etc (he has many great qualities but cooking is not one of them).

Weekly Menu Plan



I'm back into the menu planning game and believe me, I am so glad.

I haven't been menu planning for the past few months and while we always ended up having a meal on the table at dinnertime there were more instances than I would like to admit where the 5 o'clock hour came around and I was scrambling to figure out what I could make.

I have also come to love menu planning because I find I make a lot more new recipes when doing it and another bonus is that a plan keeps my grocery shopping in check because I know what ingredients I need ahead of time instead of just throwing tons of things in my cart "just in case" I may need them.

Monday
For my husband and I...
Tuna Casserole (I made my own cream of mushroom soup with homemade beef stock which makes the casserole extra delicious- my husband's portion had regular pasta and my portion had gluten free pasta)

For the kids (they hate tuna casserole)...
Hard Boiled Eggs

Homemade Pumpkin Muffins

Tuesday
Slow Cooker Asian Glazed Chicken

Meatballs Subs (I substitute gluten free breadcrumbs and almond milk to make the meatballs gluten/dairy free- I will eating my meal sans the sub roll)

Grilled Italian Dressing Chicken or possibly take-out; It totally depends on how I'm feeling that day :)

I always have a menu plan in my head but I really need to be more consistent with writing it down. As you can tell if you read my blog, consistency is something I suck at- I am working on it.

Take Out (I'm not going to be getting home until after 5 pm, so I won't have time to make dinner)

I work until 6 (and don't get home until 6:45) so my husband is in charge of dinner for him and the kids- most likely a frozen pizza or frozen raviolis. I will eat something from the freezer when I get home.

Weekly Menu Plan


This week and next week's plans are going to be super simple because my grocery budget is tight for the next two weeks. I bought some meat this week and along with what I have in the freezer I should be able to get by with what I have. Hopefully next week's shopping will just be produce and milk (hopefully being the operative word).

Weekly Menu Plan


This week I am feeling good about my menu plan. Last week I didn't make one nor did I make a concrete grocery shopping list, which basically threw my whole week off. Dinners were jumbled and we ended up getting take out a couple of times. I was also very snippy all week because I didn't buy enough food to keep me feeling energized- I am gluten and dairy free so I need to take a lot of care in planning what I have on hand. I normally do a lot of my food prep on Sunday but this did not happen last week and it showed. 

This week I already have a huge bowl of rice in the fridge, black beans soaking for a new side dish I am trying (there will be leftovers for me to freeze), lettuce washed and ready to eat and watermelon all cut up. Tomorrow I plan on making some hard boiled eggs and a batch of kale chips. I am also going to make a gigantic batch of waffles for the kids- I freeze them for quick and easy breakfasts.

So, here is my menu plan for the week. This is what I bought for the week, but I am also planning on going to a local grocery store on Tuesday (they are have a 2 day sale) to buy scrod for $3.99/lb, cherry tomatoes for .99, cucumbers for .74, celery for $1.49, kiwi for .50 each and bananas for .39/lb.

Saturday
Buffalo Chicken Wraps (my husband used tortillas and I used lettuce)
Salad with Homemade Croutons
Rice (I make up a huge batch and then freeze the leftovers)
Corn
The kids had cereal and fruit because they don't like super spicy food

Sunday
Meatloaf (will make using homemade gluten free breadcrumbs and almond milk)
Roasted Potatoes
Green Beans
Salad
Beets

Monday
Slow Cooker Italion Dressing Chicken
Best Black Beans Ever (recipe from the Jan/Feb issue of The Whole Deal- will post later)

Baked Scrod with Lemon Herb Panko Crumbs (I will use homemade gluten free bread crumbs)
Roasted Potatoes

Wednesday

Homemade Chicken Soup (my family will get noodles and I will get rice)

Homemade Pizza (I have gluten free crusts for myself in the freezer) with Nitrate Free Pepperoni
I will top my pizza with just sauce, mushrooms (from my freezer) and green peppers (from my freezer)

White Rice (my husband prefers white rice- I like brown better but I let him win sometimes)

American Chop Suey (ground beef, tomatoes, onion, salt and pepper)

Weekly Menu Plan


This week is exciting for me because I am trying out two new recipes. I find that making new things breathes life into my menu planning and makes me look forward to cooking dinner instead of me dreading making dinner (I have been dreading dinner prep a lot lately).

As always, my meals either are gluten and dairy free or include gluten and dairy free options. I have Crohn's Disease and have cut out gluten and diary because it basically makes me sick- since doing so I have been feeling great and nothing beats finally feel in healthy!

Now onto the menu plan...

Saturday
Beef Hot Dogs (nitrate and antibiotic free)
Roasted Potatoes
Salad with Cucumbers and Tomatoes
Fruit for the Kids

Sunday
Pasta with Meatballs (gluten free pasta for me)
Broccoli
Salad

Monday
Slow Roasted Pork Shoulder with Peach Sauce (from Cook's Illustrated- will post recipe later)
Mashed Potatoes (will use almond milk and Earth Balance dairy free "butter")
Green Beans
Beets in Vinegar (my husband and kids love these for some reason)
Corn (I cook with a little Earth Balance butter)
Fruit for the kids

Tuesday
Salsa Chicken (chicken breast in a crock pot with a jar of salsa- yum)
White Rice (my husband hates brown rice so I am giving in for this dinner)
Salad with Tomatoes
Fruit for the kids

Wednesday
Tacos with Lettuce, Cheese and Tomatoes (we'll have flour tortillas and corn taco shells)

Corn (yep, corn again)
