Menu Plan Monday


Just like every week, this menu is not set in stone. I may make a mid week trip to Whole Foods (and "borrow" money from net week's grocery budget) because my four year old has a preschool homework assignment where we have to prepare a healthy meal together. I would love to do this on Wednesday night and need a couple of extra ingredients to pull it off (we are going to make pizza pockets).

Sunday
Roasted Whole Chicken
Rice
Beets
Corn
Tater Tots (for my husband- he said he didn't want rice. blah)

Monday
American Chop Suey (using up all of the random small amount of pasta I have)
Homemade Italian Bread
Broccoli
Corn (husband is obsessed with corn)

Tuesday
Buffalo Chicken Wraps (with leftover chicken from Sunday)
Baked Chicken Legs (for the kids)
Brown Rice
Green Beans

Wednesday
Pizza Pockets (making 1/2 whole wheat dough and adding lots of veggies to the sauce)
Mixed Veggies

Thursday
Tacos (I will have to post my recipe- it is delicious!)
Homemade Refried Beans
Corn
Broccoli

Friday
Homemade Macaroni and Cheese
Homemade Breadsticks
Green Beans

Saturday
Raviolis with Sauce
Broccoli

Along with what I serve for dinner I also let the kids have fruit, homemade bread and/or homemade yogurt. I expect to eat what I make (unless it's buffalo chicken wraps- too spicy) and refuse to make them something special- the fruit, etc. is my little buffer zone for when they refuse to eat the regular dinner.

  1. You make some amazing meals! I wish I was able to put all of that on the table. I too expect the kids to eat what we have. Fruit, chopped fresh veggies and yogurt are also what we use as "wiggle room." They will eat those things if nothing else, so they won't starve. I think it helps them to eat healthy and in proportion to what their bodies need. You can never lose with fresh produce. Have a great week!

    1. Thank you! I used to make special meals but now with three kids I cannot handle it, but like you I can't do the eat it or starve thing. I think adding a couple of healthy extras is a good compromise :)

  2. Gosh, I'm struggling to cook for 2 of us. I really need to hone my skills before I feed children too!

    1. Believe me, if i could I would get take out every night but we can't afford it. Dinner is a very stressful time for me but over the years I have learned (and am continuing to learn) how to make things go more smoothly :)
