Here is my menu plan for dinners this week (but we all know they say about the best laid plans...)
Monday
Main Dish: Grilled Salad Dressing Chicken Breast
Side Dishes: Eggplant Croquettes and Corn
I found the eggplant recipe on All Recipes so I hope it tastes good! I have a huge eggplant that I got at the Farmer's Market last week and want to use it before it goes bad.
***Update: I made the Eggplant Croquettes tonight and they were delicious! This recipe is a keeper!***
Tuesday
Main Dish: Homemade Macaroni and Cheese
Side Dishes: String Beans
Wednesday
Main Dish: Marinated Steak Tips
Side Dishes: Corn, Beets and Spinach
Thursday
Main Dish: American Chop Suey
Side Dishes: Broccoli and Homemade Breadsticks
Friday
Take Out- Yeah!
Saturday
I am a total flake and forgot that my 5 year anniversary is Saturday (my loving husband reminded me after reading this post). So, the kids will get whatever my husband feeds them and we we be going out to dinner- where I do not know. As far as I'm concerned we could go to McDonalds as long as we can go alone.
Sunday
Main Dish: BBQ Chicken Legs
Side Dishes: Roasted Potatoes, Corn, String Beans and Homemade Breadsticks
