The past two days have been creative dinner days for me.
Yesterday my daughter had a doctor appointment in the afternoon so I knew that there wouldn't be much time when we got home to prepare dinner. I had a pork roast in the freezer that has been in there since February (I am not one to remember to defrost things) so I pulled out the trusty crock pot. I put the frozen roast in with some BBQ sauce that I got for free and turned that baby on high. Four hours later the pork was cooked (it smelled delicious in my house) and I made some mashed potatoes from scratch and some string beans. It was a very tasty dinner and I am now rid of that pesky pork roast that has been haunting me since February.
Today I noticed that I had a bottle of pasta sauce that was a little less than half full; definitely not enough to have pasta for dinner. I decided to make calzones with it. I made homemade dough using this recipe from All Recipes (just the dough part- if I gave my husband anything with broccoli in it he would divorce me- I also used part whole wheat flour but I didn't tell him that) and made the filling out of the leftover pasta sauce, shredded mozzarella cheese and some homemade meatballs that I had in the freezer. I scaled it down to four servings but that was way too much for my husband, son and I so I will scale it down to two servings next time. The calzones came out so good that I can't believe that I made them. Next time we will be a bit more creative with the fillings.
It feels good to use what I have laying around to make good, made from scratch meals. I feel like such a housewife- where's my fricken raise?
