Menu Plan Monday- Back in the Game!


I am jumping back onto the menu planning bandwagon.

Why? Because I am trying to not spend an arm and a leg every week at the grocery store. Recently I have decided to revamp the types of food I am buying which inherently will up my grocery budget. By menu planning I hope to keep those costs as minimal as possible.

Here we go...

Sunday
Parents took us out to eat for my birthday (can you believe that all three kids were good at the restaurant? I sure couldn't!)

Monday
Pasta with Homemade Meatballs (I use all beef instead of a pork/beef mixture)
Italian Bread from the Bread Machine
Salad

Tuesday
Pork Roast
Roasted Red Potatoes
Corn
Beets

Wednesday
Chicken Stir Fry with Rice
Broccoli
Corn

Thursday
Lasagna
Green Beans

Friday
Take-Out Day!

Saturday
I don't get home from work until 7 pm so my husband is on dinner duty for the kids; he usually makes them something like scrambled eggs, grilled cheese sandwiches on whole wheat bread, Annie's mac & cheese, etc. When I get home he and I eat pasta or soup- basically something quick and easy.


Along with menu planning I am going to get back into freezer cooking. I am going to make a huge batch of meatballs on Monday and a double recipe of lasagna on Thursday which will be so easy considering I am making those items for dinner anyways. I am also going to make a gigantic batch of homemade chili on Monday (we will not be having it for dinner because no one else in my household likes chili- boo to them) and sometime during the week will make a huge batch of homemade waffles to freeze.

    Pinterest is a fantastic resource for recipes! I made a banana cake, onion dip and a turkey soup last week...all found on Pinterest. They're now family favorites!
    It looks like there's going to be some delicious meals enjoyed this week.
